#ThankGoodness Challenge #Dolmio

Have to say this was a really fun one and thank you to Brit Mums www.britmums.com too for the Tesco shop to create these ideas. Firstly I received so much that I thought could get a few family meals out of these ingredients that I got sent. Right now for my Recipe 🙂 I decided to go a bit different too and cook up a Chicken Parmigiana which went down a treat and worked really well. Next follows step by step how I created this.

Started by finely chopping all the vegetables you want to include in the sauce these can be a mix of whatever you got or need to use up.  I used peppers, Courgette , Carrot, little chilli and onion. Then cook in butter till all the ingredients are softened.

Lay the cooked vegetables in to an oven proof dish, and grate a lot of parmesan cheese.

Open up the chicken, this was a 4 pack of breasts, then using cling film, cover and using a rolling pin tender them up and flatten so they cook evenly. I used Panko breadcrumbs mixed with the parmesan cheese , using the flour, egg and breadcrumb method coat the chicken breasts, you can double do it to make sure fully covered.

Add the Dolmio sauce to the dish you had put the vegetables in and on the hob in a little oil fry the coated chicken breasts, till golden and cooked through.

Chopped your Mozzarella cheese ready to top the chicken. Bake the sauce in the dish till warmed through slightly, then add the chicken from the hob to the dish and top with the Mozzarella cheese, then cook until golden brown and the cheese has melted all over the chicken.

Then all is good, serve with salad which would be lovely but we served with some chilli cous cous. This I believe is a lovely family meal and can be changed to suit all tastes, great for getting the kids involved too as they can do the breading of the chicken.
